Weathervane Sea Scallop and King Boletes mushrooms lightly seasoned then seared, served with a rich butternut squash puree, crème fraiche and shaved truffles

Roasted Bone Marrow Brulee
Snake River Farms bone marrow, served in a roasted bone with fresh parsley, shaved red onion and roasted Chanterelle mushrooms

Poached Quail egg, Serrano ham, on toasted brioche crouton with wild greens tossed in a light mustard vinaigrette and finished with sauce bearnaise
